Pizza Making Class at Max’s Coal Oven Pizzeria

I’m not one to EVER turn down pizza, so when Max’s Coal Over Pizzeria invited a group of us to try out their pizza-making class, I was thrilled. Max’s, located downtown, is the only coal-burning oven in Georgia.

I thought it was strange that the class started a bit late, at 8:30pm, but they actually shut down the restaurant for the class. No worries about starving until your pie comes out of the oven either. They fed us some tasty appetizers while they explained their pizza making process and gave us some history about the 1,000-degree coal-burning process.

One thing they stressed during our class is the quality of ingredients. For example, they use the 00 (double zero) flour in the dough, more than six times the cost the of the flour used in the average pizza restaurant. They also lined up a comparison of Max’s vs. national chain’s ingredients (see above) of cheese, pepperoni and sauce. Night and day difference.

The two-hour classes make for fun date nights. Although each participant can make their own pie, Mr. ARB and I teamed up. He stretched the dough and got it just right and I loaded our pizza with toppings. Mushrooms, onions, prosciutto, and meatballs – oh yeah! Class size is limited to a total of eight people, which ensures everyone gets a fair amount of instruction.

Dates are February 4, February 11, March 4, March 25 and April 22. Participants get hands-on action, stretching and throwing the dough to create their own crusts. Post a picture of your pizza on Max’s Facebook page, and the guest with the most “likes” by the following day will receive a free gift card!

The cost of Max’s Pizza-Making Classes is $30 per person and includes appetizers and two drinks. To make a reservation for the class (required), call or email Mary Jo Schmidt at 404.974.2944 or [email protected] There’s a parking deck directly across the street from Max’s. I love that they validate for three hours, not two like Atlantic Station.
