There are many reasons to love fall: the cooler weather (I’m in South, so cooler weather is definitely a relief), boot and scarf season, and of course Pumpkin in every form is EVERYWHERE! I can’ get enough of Pumpkin – lattes, bagels, pumpkin beer, it’s everywhere and I love it!
I especially love this recipe for Pumpkin Waffles with Bananas & Warm Caramel Sauce.

How to make the batter for the best ever pumpkin waffles:
4 eggs, beaten
¼ cup granulated sugar
1 tbsp sour cream
1 cup canned pumpkin
2 ½ cups milk
Mix all together till smooth
One of the great things about this pumpkin waffle recipe, is that it includes so many kitchen staples that you will likely already have on hand. Sure, you’ll probably have to buy the canned pumpkin, but other than that just read through the list of ingredients and you’ll find that you probably already have most of these items in your kitchen or pantry so no need buy a ton of ingredients! That’s a win in my book!
3 cups unbleached flour
½ tsp salt
2 cups oatmeal
1 tbsp cinnamon
½ tsp ginger
1 ½ tbsp baking powder
Mix till smooth.
Now, at this point, you could call it day and serve these marvelous pumpkin waffles as is. Just warm up some maple syrup and pour over the waffles and your guests would be thrilled with what you are serving them for breakfast or brunch. After all, that much more work than many do for their guests. But I encourage you to go ahead and make the caramel sauce for these ultimate pumpkin waffles. The recipe won’t be as good without this topping for the pumpkin waffles.

How to make the caramel sauce for the best ever pumpkin waffles (the perfect topping for your waffles)
½ cup granulated sugar
1 cup brown sugar
1/3 cup water
Pour all ingredients into heavy saucepan and stir. Simmer until sugar is dissolved.
Add:
1 can sweetened condensed milk
½ cup corn syrup
¼ tsp. salt
½ tsp. vanilla
Melt until caramel golden brown.

How pretty do these pumpkin waffles look?
Though I wouldn’t recommend skipping the butter topping on the pumpkin waffle recipe, you could skip the pecans or banana topping if you want or if you just don’t happen to have those items on hand. BUT they will be much prettier if you top them with something other than the caramel sauce.
Optional toppings for the most wonderful pumpkin waffles you will ever have:
2 Tbs. chopped pecans
½ sliced banana
¼ cup cold butter
Pour 1 cup batter into waffle iron and top with chopped pecans. Remove from waffle iron and place 2 pats of butter and sliced banana on top of waffle. And that’s it!
