Copycat Recipe: Red Lobster Spicy Pineapple Glazed Salmon

This meal, from Red Lobster, is a little more healthy than the usual restaurant recipes I list. Eating fish, especially salmon, is a great way to control weight and it is so healthy for you. No common fish delivers more of the omega-3 fatty acids that help keep arteries clear and hearts strong than salmon. Studies have shown that these fatty acids may also strengthen the immune system and eyesight, and even improve mental health.

Serves 4

Spicy Pineapple Glaze Ingredients:

1/2 Cup Sweet Chili Sauce
1 ea 8 oz can Crushed Pineapple in Pineapple Juice
1/2-1 Tsp Cajun Seasoning

Fish Ingredients:

4 ea 5-6 oz Salmon Fillets
Salt and Pepper, to taste
Nonstick Cooking Spray

Preparation for this easy Red Lobster recipe:

1. Preheat the oven to 400 degrees and place the Salmon in a 9X13
baking dish sprayed with Nonstick Cooking Spray. Season the Salmon
with Salt and Pepper.

2. In a small bowl, combine all the Glaze ingredients and mix well.
Generously top each piece of Salmon with a scoop of the Spicy
Pineapple Glaze.

3. Bake the Salmon for 15-20 minutes or until the fish flakes
easily with a fork.
