I didn’t grow up eating southern food like Collard Greens. I never liked them, but lately I’ve heard of the health benefits of collard greens. In an attempt to eat healthier, I wanted to add collard greens to my diet. So, I was determined to find a way to cook them that I would enjoy. And here’s the recipe that I came up with. While I know bacon may not be the healthiest thing to eat, it is small amount in comparison to the amount of collards. I’ll warn you, it is rather tedious tearing the collards into strips but this recipe (if I do say so myself) is so worth it!
2 bundles of collards (about 4 lbs.) torn into strips
4 uncooked slices of bacon
5 cloves garlic minced
1 medium onion chopped
2 chipotles in adobe sauce (chopped)
salt to taste
Stack bacon slices on top of each other and cut into quarters. Put in a large skillet and cook on medium until crispy. Remove from pan. Leave skillet on medium add olive oil (1 turn of the pan). Add in garlic and onions and cook for about 5 minutes or until onions are clear, being careful not to burn garlic. Reduce heat to medium low. Add strips of collards slowly. They will reduce down as they cook. Cook for about 7 – 10 minutes. Add in the chipotles and mix up well. About a minute before turning off the stove add the bacon back to the skillet and mix it in with the collards.
