The Ultimate Tailgating Pizza

Simon’s Specialty Cheese is located in Fox cities, Wisconsin. After having eaten fried cheese curds at both lunch and dinner for about three days (not complaining!), I was happy for a change of pace: Pizza at Simon’s. Simon’s Specialty Cheese has been in operation and family owned since 1940.

Tips from a Master Cheese Maker

Before we dined, we were treated to a specialty behind the scenes look at cheese scoring from two Master Cheese makers. Did you know? Wisconsin is the only state that requires a Master Cheese maker on site when cheese is being produced. Think of the these guys as the Sommeliers of cheese.

Besides cheese, Simon’s carries of variety of wine, craft beer and even some prepared foods to go. One of their specialties is pizzas to take and bake which are made in store. For my group’s visit, several of them were prepared for us. While I loved the pepperoni and the sausage and mushrooms it was the unique Bratwurst pizza that was utterly delicious. And I don’t even like sauerkraut! Plus, who would have thought to sub mustard for pizza sauce?

Even if you can’t make it to Wisconsin or Simon’s Specialty Cheese, you still can taste something similar to the pizzas they bake in store. This pizza recipe is perfect for tailgating or if you are having friends over to watch the game.

Bratwurst and Sauerkraut Pizza Recipe

1 Fresh pizza crust
1/3 Cup Apricot Mustard (you can sub Apricot Preserves but the mustard works better)
1 Cup Mozzarella
2 Pre-cooked bratwurst links sliced
1 Cup (drained) Sauerkraut
A sprinkle of cheddar cheese (about 2 tablespoons)

Spread the mustard over the crust and then add mozzarella cheese, bratwurst, sauerkraut and cheddar cheese in that order. Bake at 450 for 10-12 minutes or until cheese on the edges starts to turn brown and bubbly.
