Peanut butter-chocolate no-bake cookies recipe

You can make a yummy dessert without turning on your oven. This simple recipe mixes cocoa and peanut butter with quick oats to make a treat everyone loves. These easy cookies are perfect when you are super busy and just do not have much free time. If you get all your ingredients ready early and time the boiling part just right, you will get a perfect fudgy texture. Read the guide down below to learn how to make these sweets.

Understanding the classic dessert appeal

You really cannot go wrong with a sweet treat that takes almost zero effort to make. I always make these when I get a random sweet craving because you just toss things in a pot. It is the best thing ever when you want chocolate and peanut butter together but definitely do not want to use the oven.

Gathering the necessary ingredients

You probably already have everything sitting in your pantry waiting to be used. You will need sugar and milk and cocoa powder and butter for the base of the syrup. Then you grab creamy peanut butter and vanilla extract and quick oats to finish it off.

Preparing your work station

The whole process happens so fast that you really need to set up your stuff before you turn on the stove. I learned this the hard way so I always lay out wax paper on the counter first. You also want to measure the peanut butter and oats into bowls ahead of time.

Heating the butter and sugar

Throw your butter and sugar and milk and cocoa powder into a medium saucepan and turn the heat to medium high. You want to stir it up constantly so the sugar melts down and nothing burns. It starts to look like a glossy chocolate soup which is exactly what you are aiming for.

Timing the boiling process

Pay close attention to the pot now. Look for really big bubbles popping on top. Once they show up you have to set a timer for exactly one minute while stirring it non-stop. If you follow this timing perfectly your yummy cookies will be solid and they won’t be mushy at all.

Removing from the heat source

When your timer makes a noise, get that pot off the hot stove fast. If the liquid boils too much, the sugar simply gets too hot for the recipe. That makes your cookies dry and very crumbly. Sliding it away instantly keeps them deliciously soft and chewy for your family.

Incorporating flavor enhancers

Now comes the fun part where you add a scoop of peanut butter and a splash of vanilla extract right into the hot mix. The heat melts the peanut butter down fast and you just stir it until everything is super smooth. The smell in your kitchen will be absolutely amazing right now.

Adding the quick oats

Toss those quick oats into the pot and give it a nice slow stir. You want the oats to drink up all the good stuff so check the bottom for dry spots. Quick oats work best for this recipe since their tiny pieces make the cookies perfectly soft and smooth.

Shaping the cookie mixture

Grab a spoon and start dropping little mounds of the mixture onto your prepared wax paper. You have to work somewhat fast here because the mixture starts cooling down and getting stiff pretty quickly. Do not worry if they look a little messy because rustic cookies somehow taste better anyway.

Allowing proper cooling time

Now you have to wait for the cookies to cool off. Just let them stay on the counter until they get hard. When the house is hot, you can always put them inside the fridge to help them along. Once they are nice and firm, put them away in a container for the whole week.
