This is such a unique salad with an incredible mix of flavors. If you are not already a salad-lover, then you will be soon after
trying this grilled chicken salad. I love that you can change this up as well. Lost the carbs by omitting the tortilla strips.

Basic ingredients for this easy grilled chicken recipe are right here:

1 bag mixed salad greens
1 large carrot, julienne cut
2 grilled chicken breasts, sliced
thin tortilla strips

So if you don’t want to grill the chicken breast (who has time for that?) there are a couple alternatives. You could just make them in your instant pot. I use my Instant Pot to cook about three meals a week. I find making chicken is great meal prep. Just throw it in the pot with some soy sauce and you’ve got a great flavorful chicken. Or you could be really lazy and just buy a rotisserie chicken from the grocery store too. No shame in that!

Lime dressing for the grilled chicken salad :

My recommendation is to make this ahead of time or make a big batch of this dressing for the grilled chicken salad. It is the most time consuming part, so make it on a day you are off and you can put this salad together for a quick lunch two or three days a week. I am all about meal prep to make me eat healthier. When it gets more complicated or time consuming for me to prepare a meal, that’s when I start to eat less healthy.

1/2 cup lime juice
7 tablespoons honey
4 teaspoons honey mustard
2 garlic cloves, minced
1 teaspoon black pepper
1/2 teaspoon salt

How to make the Peanut sauce for this healthy grilled chicken recipe :

4 tablespoons soy sauce
4 tablespoons hot water
4 tablespoons peanut butter
2 teaspoons sesame oil
1 tablespoon ground ginger

In a small bowl, combine the lime dressing ingredients and mix well. In a large bowl, combine the salad greens, carrots, sliced chicken and tortilla strips. Pour the lime dressing over the salad and toss to combine. Transfer the salad to 4 salad plates. In another bowl, combine the ingredients for the peanut sauce and mix well. Drizzle each salad with the peanut sauce and serve.
