Superbowl Sunday – Recipe Ideas

Superbowl Sunday will be here tomorrow. Are you entertaining a crowd and wanting to make some appetizers or finger food to feed a hungry bunch? I’ve put together my all time favorite delicious but completely easy and foolproof recipes. These are especially great if you don’t have a lot of time to devote to preparing the food.

I made these several years ago for a party I was having. Although I had enough food for about 50 people only about half of that amount showed up. But at the end of the night, all the food was gone. People were really impressed with how good everything was. The part that I like the best is I made them all myself and they tasted like I had been cooking all day.

So, here goes:

Apricot Salsa Meatballs

The combination of sweet and sour is a great flavor!
Ingredients
• 1 lb frozen meatball, regular, appetizer sized
• 1 cup salsa, fresh if possible
• 1 cup apricot preserves
• 1 tablespoon cinnamon

Directions
Place all ingredients in a large saucepan or crockpot.
Mix thoroughly with large spoon.
Simmer 30 minutes stovetop or 2 hours in crockpot on high.

Pinwheels

The great thing about this recipe is that it can be made in advance and stored for a day or two before serving.

Ingredients
• 8 ounces cream cheese
• 8 ounces sour cream
• 3-4 green onions
• 1 can diced green chilis
• 1-2 package thin sliced ham or turkey (I’m talking about the pkgs that are about $.59 each)
• 1/4 teaspoon garlic salt
• 6-8 large flour tortillas

Directions
Combine all ingredients (I use a mixer).
Spread completely on flour tortillas.
Roll the tortilla closed.
Refrigerate to set (or until ready to serve).
Slice in about 1/2″ slices.
Serve with your favorite salsa on the side.
Note: add as much green onions and meat as you like, but it must be able to spread on the tortillas.
Depending on how thick you spread this is how many tortilla rolls you will end up with.

3 Ingredient Nacho Dip

Ingredients
• 2 (8 ounce) packages cream cheese
• 2 (15 ounce) cans hormel chili (with or without beans)
• 1 (8 ounce) bag of shredded cheese, 4 cups (nacho cheese works best)
Directions
Layer the 2 packages of cream cheese on the bottom of a glass square 8×8 baking dish.
Cover evenly with the 2 cans of hormel chili.
Cover with the shredded cheese (depending on how cheesy you want it use anywhere from half of the bag to the entire thing).
Put in microwave (or oven at about 300 degrees) leave in until cheese in center is bubbly.

Creamy Crock Pot Crab Dip
Ingredients
• 1 (8 ounce) package cream cheese, softened
• 1/2 cup mayonnaise
• 1/4 cup sour cream
• 1 teaspoon garlic salt
• 2 teaspoons white wine worcestershire sauce
• 1 tablespoon dry sherry
• 1/4 cup sliced green onion
• 2 (6 ounce) cans crabmeat, drained
Directions
Place cream cheese, mayonnaise, sour cream, garlic salt and Worcestershire sauce into a crock pot.
Mix well, then add sherry, onions and crab meat and mix lightly.
Cover, cook on low for 1 1/2 to 2 1/2 hours.

Old Bay Party Nuts

Although this is the last recipe in the group, it is by far my favorite. It is so much better than just setting some nuts out on the table. Baking the nuts really brings out the oils and really adds to the already great flavor the seasonings have given them. I was asked for this recipe by many, many times.

Ingredients
• 2 tablespoons butter, melted
• 2 teaspoons Old Bay Seasoning
• 2 tablespoons worcestershire sauce
• 1/2 teaspoon garlic powder
• 1/4-1/2 teaspoon hot sauce
• 2 cups pecan halves
Directions
Stir together melted butter, Old Bay Seasoning, Worcestershire sauce, garlic powder, and hot sauce; add pecans, tossing to coat. Place nuts in an aluminum foil-lined 15- x 10-inch jellyroll pan.
Bake seasoned nuts at 300° for 30 minutes, stirring twice. Cool. Store in an airtight container.
